Executive Chef Raoul Meuwese describes his dishes as “classic and traditional French, with international influences and a local touch.” He prefers to work with fish and local products which are sustainably grown or caught and based on these products he creates dishes according to the season. Amsterdam is the place where cultures meet and the international influences that characterize the city, are reflected in the dishes served at Bridges.

Our Wine Director, Joshua Mullock, carefully selected both exceptional and accessible wines as the perfect complement to your culinary experience. A unique feature of Bridges is the Chef’s Table in the heart of the kitchen, where you can experience the magic of the kitchen brigade up close (max. 6 people). For private events, Bridges also provides a private dining area, where you can enjoy an intimate dinner in the comfort of your own private space. The private dining features its own cocktail station and a selection of specialty whiskeys. This private room is suitable for parties up to 12 people and provides a pleasant view on one of the historical canals of Amsterdam.
Payments by cash, debit card or credit card is possible. We do not accept 500 euro billets.

Restaurant Bridges received once again 16 points from Gault Millau and achieved the 42nd place in the restaurant top 500 of Lekker 2024.
Raoul Meuwese (1982) is the Executive Chef of award-winning restaurant Bridges. He was formerly the Chef de Cuisine of restaurant De Hoefslag (Bosch en Duin, The Netherlands) and has years of experience in various other kitchens. In the past, he worked at a.o. restaurant Seinpost (*) in Scheveningen and restaurants Leds and Savarin in Rijswijk.
Originally from Wales, Joshua Mullock (1996) moved to The Netherlands in 2024 to take on the role of Wine Director at The Grand. With his passion for wine and restaurants that began at a young age, Joshua earned his WSET diploma early in his career, setting the foundation for his career in fine dining and wine. His professional path began as a Sommelier at Restaurant Number One in Edinburgh, and from there, he built a career across several UK restaurants. Joshua was also awarded ‘Best Sommelier for Northern England, Scotland and Ireland,’ by Harper’s Magazine, the ‘AA Wine Award’, earning him the ‘Master Sommelier’ title.
He brings a thoughtful approach to wine selection, curating a balance of both extraordinary and accessible wines to enhance every dining experience. With his deep knowledge and love for wine, Joshua is dedicated to ensuring that every guest enjoys a unique and memorable gastronomic experience.
